Air is definitely one of the main enemies of good coffee as it can cause irreversible damage. The exposure of beans to ambient temperature, even for only a few weeks, could be sufficient to change the flavour and cause the aroma to be lost.

They aid all phases from pnematic conveying in inert atmosphere, which is especially important in ground coffee, to packaging in modified atmosphere, which, apart from avoiding deterioration in quality, also prolongs the shelf-life of the coffee.
