
Why Kryos® 2.0
Whenever crushed grapes come into contact with air, they can absorb up to 8 ppm of oxygen and trigger oxidative processes that require corrective measures involving sulfur dioxide. Kryos® 2.0 solves the problem at its root: positioned downstream of the destemmer-crusher, it cools the crushed grapes, removes dissolved oxygen, and saturates the mixture with CO₂ or N₂, all fully automatically.

SIAD supplies the Kryos® 2.0 system, the food-grade cryogenic gases required for its operation, and ongoing support services that ensure consistent performance throughout the entire harvest season—from tank installation to consumption monitoring and automatic refills.
A AISI 304 truncated cone heat exchanger, with no moving parts or geometric irregularities, controlled by a PLC with dedicated software. It operates in batch or continuous mode downstream of the destemmer-crusher, reducing mechanical stress on the skins and minimizing the formation of lees compared to traditional heat exchangers.
Kryos® 2.0 is powered by CO₂ E290, supplied from a cryogenic tank. Used in both its gaseous and cryogenic states within the crushed grape mass, it forms a two-phase flow at approximately -80°C that cools, inertizes, and saturates the skins without causing thermal shock or cold burns, with a cooling consumption of 1.1–1.2 kg CO₂ per quintal per °C.
For wineries that prefer to limit the amount of carbon dioxide added to the crushed grapes, Kryos® 2.0 can also operate with cryogenic N₂ E941. The same system manages the gas via dedicated software, with an injection mode designed to replicate the thermal and inerting effects achieved with CO₂.
